Kombucha is a drink made from high antioxidant organic green tea (our own green tea of course), brown sugar, and an original mushroom scoby, which becomes vinegary over time.
Kombucha is rich in B-Vitamins and good pro-biotics.
Process:
The sugar turns into vinegar in kombucha through a two-stage fermentation process driven by the mushroom or scoby which is a symbiotic culture of bacteria and yeast.
First, yeast consumes sugar and converts it into alcohol, and then the bacteria consumes the alcohol and oxidizes it into acetic acid (vinegar), which increases acidity and decreases sweetness over time.
Some companies add flavours but in the Gaia Kombucha drink, there are no other added ingredients.
